Ingredients:
125 g butter softened
125 gm plain flour/maida
25 gm icing sugar
25 gm corn flour
1\2 tsp vanilla extract
1 tbsp milk
100 gm chocolate melted



Method:
  • Whisk butter and sugar till light and fluffy.
  • Sift the flour,cornflour together.
  • Add Vanilla extract to the butter mixture and add sifted flour .
  • Whisk on low speed add milk whisk till thick and sticky.
  • Fit the piping bag with star nozzle.
  • Preheat oven at 180degree Celsuius 
  • Pipe into fingers and bake at 180 degree Celsius for 15-20 min.
  • Remove from the baking tray and place on wire rack to cool.
  • Dip in chocolate and let it set.

I'm a chocoholic by birth I'm crazy for chocolates and so chocolate cake has to be my favourite..I always bookmark the recipes i love and the list keeps getting longer by the day.I had bookmarked this recipe long time back just happen to check the long bookmark list few days back and found this .The best soft melt in mouth cake i ever tested .. .This cake calls for dutch processed cocoa and I tried this with normal unsweetened cocoa so had to use only baking soda and no baking powder as mentioned in the recipe ..I was a bit sceptical of how will the cake rise and so many questions but it was amazing...The cake as perfectly baked and was very soft and delish ..I gave my neighbors and cousins too and they too loved it..The best part was my cousin's baby who is just 7 months old too enjoyed it..I actually gave her aunt ot taste and she just put a small bite in her mouth baby loved it and cried for more she had one slice which is really a compliment..

 Ingredients:
1.5 cup flour
1 cup brown sugar
1/2 cup sugar
1 large or 2 small eggs
1 cup buttermilk (milk +2 tbsp lime juice)
1/2 cup butter
2 tbsp oil (optional)
1 tsp vanilla extract
3/4 cup cocoa powder
1/2 tsp baking soda



 Method:
Cream the butter and sugar till smooth and fluffy.
Add the eggs and whisk till everything mixes.
Add the buttermilk,oil if using,vanilla extract and whisk well.
Fold in the sifted flour and cocoa powder and mix well .
Preheat oven at 180degree for the 10 minutes .
Pour the batter in  greased cake tin lined with parchment paper .
Bake at 180 degree Celsius for 55-60 min or till toothpick inserted comes out clean.
Allow to cool completely before slicing it.
Enjoy this soft and delish cake

This is my version of a very tasty chicken masala..I just gave it a try and it was super yummy it went well with brown pulao..It tasted great with naans too..The recipe is very simple do try this simple yet delish chicken tikka masala.

Ingredients:
1/2 kg boneless chicken
1 tsp ginger garlic paste
1/2 tsp red chilli powder
1/2 tsp garam masala powder
3 tbsp curds
salt to taste

2 tomatoes chopped
2 onions sliced
10-12 cashews
1/2 cup beaten curds
1 tsp ginger garlic paste
1/2 tsp red chilli powder
1/2 tsp garam masala powder
1/2 tsp fenugreek leaves/kasuri methi
oil 3-4 tbsp

 Method:
Marinate the chicken with salt,ginger garlic paste,curds,red chilli powder and keep aside for 20-30 min.
In a non stick pan drizzle some oil and place the marinated chicken you can even grill it,cook on med flame till done.
Saute the sliced onions in 1 tbsp oil until brown .
Grind the onion,tomato cashews to a fine paste.
Heat oil in a vessel add the ginger garlic paste saute till raw smell goes off.
Then add the ground paste and saute for few minutes until oil separates.
Mix in the powdered masalas kasuri methi and the beaten curds.
Add the fried chicken and mix well.
Add salt and little water,depending on the consistency of gravy needed.
Cover with the lid and cook on med flame for 7-0 min.
You could add cream if desired .
Serve hot with rice/naan/pulao/bread.

Some times you get instant cravings at any part of the day and the urge is so intense that there's no way you can suppress..It happens to me number of times..I was craving for some chocolate cake and also wanted to bake a bread then suddenly while mixing the ingredients in the bread dough i thought of mixing cocoa powder and  making a marble chocolate bread instead..I had bookmarked  this  Asian Chocolate Marble Bread long time back but that called for water roux and  i had almost started mixing the dough .So i just continued with the same  and was more than happy and satisfied with the result..The Marble Swirl bread was cotton soft and looked very beautiful ....its was really difficult for me to resist but as i baked it at 3 am I sat quietly just staring at this beauty and waited for the morning to relish it...
 It was really soft and delish ,tasted good by itself and tasted more delish when had with nutella...


ingredients
3 cup flour
1/4 cup cream
1/4 cup milk
1/2 cup lukewarm water
1.5 tsp yeast
1/3 cup +1 tbsp sugar
1 tbsp butter
1/2 tsp salt
2 tbsp oil
2 tsp cocoa powder

Method
  • Dissolve the yeast in water with 1 tbsp sugar let it sit till its frothy.
  • Mix salt ,flour sugar in a bowl.
  • Add the yeast mixture to the flour with the cream ,milk and knead for 8-10 min.
  • Mix in the butter and oil and knead to soft dough.
  • Divide the dough into two portion into the  smaller dough  one add cocoa powder
  • Knead till the cocoa is mixed well .
  • Cover and let the dough rise to double its volume.
  • Knock down the dough and shape it into balls.
  • Flatten each ball and roll into circle.
  • Place the chocolate circle over the plain dough alternatively.
  • Roll it into cylinder then flatten it by using rolling pin.
  • With the knife cut into three.
  •  Braid the dough. Put the dough in the lightly greased pan.
  • Cover and let if rise for 30-45 min
  • Brush  with milk and bake for 30-35 min at 180 degree Celsius.
  • Remove from the tin and cover with clean towel and allow to cool completely .

I'm happy to share with you all that i won the first prize in Haffa's event back to school lunch ideas..My rose rolls made me the winner..These days i enjoy baking breads and buns i bake atleast once a week sometimes even twice or thrice..I made these soft paneer bhurji buns which were a huge hit..I made the paneer bhurji actually to enjoy with some roti but ended up making these paneer stuffed buns..
It was soft and delish..tasted good even the next day.Enjoy it with your tea/coffee or have them with soup for dinner ..You will just love them..Do try these eggless paneer burji buns..

Ingredients
2.5 cups flour
2 tbsp milk powder
1 cup water
1/4 cup milk
1 1/2 tsp yeast
1tbsp sugar 
2 tbsp oil
1 tbsp  butter.
salt.

Method:
Mix yeast in luke warm water with sugar let is sit for few min till its frothy.
In a big bowl mix the flour.milk powder,salt to this add the yeast
Start kneading to a soft dough adding milk,melted butter.
Once it turns to a soft sticky mass slowly add in the oil .
Cover with cling foil and let it rise till it double its volume ,it make take 45 min to 1 hr.
Divide  into equal balls and flatten each ball and place the filling
Cover it and tuck the sides in .Place the ball seam side down on a baking tray, lined with  parchment. Brush the top with milk,  Cover lightly and set aside for about 30 mins.
Preheat the oven for 10 min at 180 degree
Bake for 15-20 min .
Enjoy freshly baked paneer bhurji buns..

I'm a hard core non vegetarian but somehow I dislike eggs ..So trying omelette,sunny fried and bhurji/scrambled eggs is a big no to me...I substitute the eggs with paneer and make bhurji to enjoy i with breads for breakfast. You can even add more veggies to this and can substitute tofu for paneer.Made this paneer bhurji for stuffing in my buns and I must tell you it tasted simply superb..This Paneer bhurji taste good  with breads/naans/chapati..


Ingredients:
200 gms paneer
2 med sized onions chopped finely
1 med tomato chopped
1 capsicum(optional)
3 green chillies chopped
1/2 inch ginger chopped
4-5 garlic cloves minced
1/2 tsp garam masala powder
1/4 tsp turmeric powder/haldi
1/2 tsp cumin seeds
1 tbsp finely chopped coriander leaves.
1 tbsp oil
salt to taste

 Method:
In a pan heat oil,add cumin seeds.
Add the chopped ginger garlic and onions and saute for 5-6 min on med flame .
Once the onions turn translucent add the green chillies and capsicum and saute .
Then add chopped tomatoes and cook till mushy.
Now mix in the garam masala powder,turmeric salt and the crumbled paneer.
Saute till everything is well mixed and dry.
Lastly add coriander leaves and serve hot with  bread/roti/chapati.

Then how about some Chicken steak with tossed veggies served with mashed potatoes and garlic bread...ohh yumm I'm drooling as i write this .Its just too tempting..why pay a high price in the restaurant when you can get restaurant style  and best quality food at home..you wouldn't right..then try this simple chicken steak which is so easy but taste absolutely delish..
I'm a die hard foodie and just love exploring different varieties ...This Chicken steak is one of my favourite and  I used to always order whenever I went out but now since i have tried this there's no ways that i go out to have this.I  had posted a simple Chicken Steak with tossed veggies some months ago .This one is served with the creamy pepper sauce ,mashed potatoes and veggies.the creamy pepper sauce goes very well with the grilled chicken . I  will post the mashed potatoes recipe too very soon..do try it out and you will love it for sure..

Ingredients
for the chicken 
Boneless chicken breasts 2
1 tsp lime juice
Crushed black pepper 1 tbsp
Mustard paste 1/2 tsp
Garlic minced 1/2 tsp
1.5 tsp oil
 salt to taste.

for the pepper sauce
Butter 1 tbsp
1 tbsp heaped  flour /maida
soy sauce 1 tsp
worcestershire sauce 1 .5 tsp
Crushed black pepper 1 tsp
Fresh cream 2 tbsp
milk 2 tbsp 
Water 1/4cup
Salt

 Method:
  • Flatten the boneless  chicken breast with steak hammer.
  • Marinate the chicken with salt,pepper,lime,mustard paste and keep aside for 3 hrs or minimum 30min..
  •  Heat the grill pan /non stick pan drizzle oil and place the chicken breast .
    Cook from both sides till done.
  • In a saucepan heat butter add the flour mix it then add the milk continue to whisk so that there are no lumps formed.
  • Now add the  worcester and soy sauce , crushed pepper,cream cook till the sauce thickens add water if the sauce is too thick.
  • Blanch the veggies and toss it in 1 tsp butter and sprinkle little pepper,salt and keep aside.
  • Pour the creamy pepper  sauce over the grilled chicken steak and serve with tossed veggies,mashed potatoes and garlic bread.

A rich and flavorful pilaf which goes well with any veg or non veg dishes..Tastes even good b itself...I made this along with chicken tandoori,Chicken Roast and Mutton in Green Masala..It was just too yumm .Its very similar to our wedding rice which i posted in m early blogging days..It's simple yet delicious do give it a try.

Ingredients:
  • 2 cup basmati rice 
  • 2 onions finely sliced
  • 2 to 3 bay leaves
  • 1/2 tsp shahi jeera
  • 4 cloves , 1 Cinnamon stick,1 -2 star anise,2 black cardamom 6 to 7 green cardamom
  • 1/2 cup almonds
  • 1/2 cup cashews
  • 3 tbsp  raisins
  • 1 -2 tbsp  ghee
  •  salt to taste 
  •  4 cups hot water
    •  Finely slice the onion and fry till golden brown and crisp and keep aside.
    • Fry all the nuts and keep aside.
    • Wash and soak the rice for atleast 30 min.
    • Heat Ghee in a Vessel , You can also make it with oil or use ghee and oil  .
    • Once ghee is hot add bay leaves,and all whole spices and fry well then add the rice and the half of the nuts and fry for about 5 min add salt and hot water  bring it to a boil.
    • Lower heat and simmer till rice is fluffy.
    • Garnish with fried onions and remaining nuts .
    • Serve hot with any gravy of your choice.

Naan is one of the most popular Indian flatbread which is famous all over the world .It goes very well with  chicken tandoori/tikkas/ Chicken Kalimiri kebab Paneer Masala, Veg Makhanwala or Butter Chicken it taste simply great .  A must order dish whenever we visit any restaurant .Then why not make soft naans at home .I guarantee you will forget restaurant naan cos these are so soft they stay well and fresh even the next day .The best thing is you don't need tandoor or even oven for that matter .It can easily be done on stove top in your normal tava.So do give it a try and enjoy soft and yummy naans at home.
Ingredients:
2 cup Maida /all purpose flour
1/2 cup water
1/2cup curds
1 tsp yeast
1/4 tsp baking powder
2 tbsp oil
1 tbsp sugar
salt to taste
1 tsp kalonji/ nigella seeds to sprinkle
butter as needed

Method:
In a bowl take 1/2 cup lukewarm water ,to this add the sugar and yeast set aside .
The yeast will be frothy then in a bowl mix maida,yeast,salt,baking powder and curds .
Knead to a smooth dough ..pour oil as you need ,the dough will be sticky apply oil to your hands continue to knead till you get soft dough.
Cover  with cling foil and allow it to rise .
Once it has doubled ,make small balls .
Dust flour on the rolling board and start rolling into oblong shape/tear down or simply roll it round.
Heat the skillet/tava.
Sprinkle kalonji on the naan and roll it gently.
Apply water on the other side of the naan.
Place the other wet side on the tava .
Close it with a lid After a minute there will be bubbles on the naan
Flip the naan on the other side and cook for a minute till brown spots appear.
Remove from the tava and brush butter .
Enjoy soft buttery naans with gravies/kababs/veg of your choice.

Chicken Kalimiri Kebab/Kalimirch Murg Tikka is a super delicious and very flavourful tikka/kebab. Kalimiri Kabab/Kalimirch murg tikka is soft melt in mouth tikkas bursting with flavours of black pepper or kalimirch.

I had tasted this kebab in a restaurant  recently when I visited my cousins .I loved every bite of this succulent kebab..Being a huge fan of pepper I wanted to give it a  try as I came home..I had some chicken breast in the fridge so thought of trying this..I just eye balled the recipe but it turn out more than I expected it to be and was happy that I could replicate the exact taste of the kebabs I tasted in the restaurant..It went very well with chicken tikka masala and butter garlic naan ..You'll just need few ingredients and you can make these super yummy succulent kebabs at your home.

kalimirch tikka recipe

Ingredients
500 gms chicken breast cut in cubes
1/4  cup  hung curds/yogurt
7-8 big cloves  garlic
1.5 inch ginger
2 to3 green chillies
1.5  to 2 tsp heaped freshly crushed black pepper
1/4 tsp garam masala powder
2 tbsp cream /malai
1 tsp lime juice
salt to taste

Method:

  • Clean the chicken and cut in cubes ,wash and drain excess water.
  • Apply salt and lime juice to the chicken pieces and keep aside for 15 minutes..
  • Grind the chilli,ginger and  garlic to a smooth paste.
  • In a bowl mix the  hung yogurt,ground  chilli ginger garlic paste ,pepper and lime juice garam masala and cream/malai.
  • Apply this mixture to the chicken and marinate for 3 to 6 hours in the refrigerator.
  • You can even grill this.
  • In a  non stick pan take 1 tbsp oil and fry on both sides over medium flame covering it with lid so that its soft and cooked well from inside.
  • Serve with mint chutney as an starter or as side dish with butter naan.

  • the curd needs to be thick ,use around 3/4 cup curd and tie in muslin cloth let all the water drain off.
  • you can adjust the green chillies as per your taste ,here i have used less spicy variety of  chillies.
  • these tikkas/kabab can be grilled ,use a skewer to place them on charcoal grill ,if using wooden skewers ,soak the skewers in water for 30 minutes before use.
  • you can baste butter while grilling these kebab/tikka

I am truly inspired with nature and traditional flavors, loves to come up with new stuff and keep searching on new recipes for my blog. Not only cooking, baking has the same importance for me. I baked my first Vanilla Cake when i was only in 10th standard under my mom's assistance. She taught me how to bake a cake, how to whip a cream? I did icing on top and frosted with pineapples. It was a big achievement for me at that time. Almost 10 years have been passed but I still call myself a learner. Other than my passion I am Telecommunication Engineer by profession and a student of management sciences. Happily married too. It was a little introduction about myself.
I am glad to be invited at Gloria's place, thanks a lot Gloria dear for taking out your precious slot for me. I met Gloria in our bloggy world, seriously she has so many wonderful collection of recipes. I was truly amazed by her desserts and vegetarian recipes. I started following her, after a week or two, found her on Facebook. When we started conversation, i found her such a sweet heart, so friendly and a humble person. Very happy to have her in my friends list. Hope our friendship will get more stronger from time to time. Well I am so grateful to her, this is truly a wonderful experience to me on her blog. When she asked me for a guest post, i started work on that. Later on decided, the recipe that i am going to share is "Cherry Bundt Cake crowned with Honey Almonds". This Cake will go best in parties, holidays, Christmas or in festivals. Lets move to the recipe

CHERRY BUNDT CAKE CROWNED WITH HONEY ALMONDS
This cake is enough for 3 to 4 members; 
Preparation time : 10 to 15 minutes, Baking time : 25 to 35 minutes
You will need:
  • 2 eggs
  • 1 tsp Vanilla Essence
  • 1/4 cup of Brown Sugar
  • 1/4 cup of White Sugar
  • 1/2 cup of unsalted Butter/ Vegetable Oil
  • 1 cup of fresh cherries
  • 3/4 cup of all purpose Flour
  • 1 tsp of Baking Powder
  • 3 tbsp of warm buttermilk
  • Bundt Cake Pan of 4 inches diameter approx.
For Crowning
  • 3 tbsp of Honey
  • 1/2 cup of Almonds
Procedure to be followed

  • STEP 1: Pre- Heat your oven up to 180 degrees Centigrade (356 Degrees Fahrenheit). Grease & flour the Pan.
  • STEP 2: De-seed the cherries, chop them and set them aside.
  • STEP 3: In a Large Bowl, with the help of electric beater. Beat eggs till fluffy and creamy. Meanwhile step by step, add vanilla essence, icing sugar, brown sugar and Oil. Beat gently.
  • STEP 4: Whisk together the flour and baking powder together. Take out your spatula, Fold in the dry ingredients (flour + baking powder) into the cake batter from Step 2.
  • STEP 5: Pour warm butter milk. Mix with Batter nicely. Time to add chopped cherries. Do not over mix them.
  • STEP 6: Scrape the batter into the greased bundt cake Pan. Bake it for at least 25 to 35 minutes. Do check if its completely baked by inserting a toothpick , if it comes out clean its ready to serve. Transfer the cake on to a rack and let it cool.
  • STEP 7: In order to make a crown. Chop the Almonds into a small pieces. Add honey. Sticky texture will be formed. Spoon that mixture over the cake. Wow it's decorated now with a gorgeous Crown. Serve and Enjoy!
