easy caramel bread pudding recipe

Caramel Bread Pudding is one such dish that's very close to my heart .I grew up eating this pudding Its been my favourite since childhood .This Caramel Bread Pudding was  staple in my house during school days I use to come home after school and Mom use to keep it ready .I loved to eat it while its still warm .Caramel Bread Pudding is easy to make a day old bread works well for this ,you can use fresh as well .This is a classic recipe which my mom my grandmom have been following .A simple easy doable recipe which requires no condensed milk. Just Eggs ,Bread Milk and sugar is all you need

You can add colours and make layered pudding as well.This is simple recipe which can be done on stove top/pressure cooker. You could even check this yummy choco chip bread pudding which I posted earlier
Ingredients:
4 ladi pav loaves or 8 bread slices( a day old will work fine)
1/2 litre full cream milk
6 to 8 tbsp sugar
2 big eggs or 3 small *
dry fruits as needed (i used finely chopped almonds)
1 and 1/2  tsp vanilla extract/essence 
1tsp butter/ghee

for the caramel
3 tbsp sugar

Method:
Cut bread into pieces.

If using bread slices please trim the edges 

Boil the milk add the bread pieces, sugar and keep aside for 20 -30 min .

Meanwhile beat the eggs till creamy .

Add the essence, eggs mixture ,ghee/butter, nuts to the milk.

Grease the mould in which you are going to make the pudding add 3 tbsp sugar to it and keep it on very low flame till it turns light brown.

Carefully till the mould to let the caramel coat it from all sides.

Pour the prepared milk -bread mixture in the mould.

Here are three ways how you can make this ..

1) Heat a  tava/griddle place a stand/ring  over it and then place the vessel with pudding mixture cover it with another big vessel and cook till done .takes about 35 min to 40 minutes check if knife comes out clean ,or steam it 
  2)Steam the pudding in the pressure cooker ( without putting the whistle)for 30 to 35  minutes or until knife inserted comes out clean.
Take a pressure cooker and fill it with lil water. Keep a stand in it and now gently keep the mixture filled vessel on the stand. Remove the whistle of the cooker and let it cook for around 35 min
3)If you wish to bake it ,preheat the oven on 180degree Celsius & bake it in water bath for 35 min.
Let it cool completely before inverting it .

I prefer using loaves/pav for the pudding if using bread s;lices you can trim the edges 
Use full fat cream milk for better results.
I use around 6 to 7 tbsp sugar for the pudding you may add 8 tbsp if you like it too sweet .
You can add a pinch of nutmeg powder or 1/2 tsp of cardamom powder as well.
You can use chopped almonds, cashews or any nuts of your choice 

I just put few drops of green colour and stirred it well from top if you like colourful puddings you could mix the colour in the milk mixture itself .

Avocado is a very healthy fruit with so many health benefits despite of knowing all the benefits I never ever used in my diet until I tried this yummy milkshake..I came across many delicious recipes from ice cream to sandwiches but never thought of trying it myself.  This summers somehow I was attracted to this fruit & gave this drink a try..Since then I fell in love with its unique buttery taste. I  enjoyed this for breakfast and it kept me  full for hours together.

I love the pale green colour this gives so I thought of adding some more nutrition & colour to this. I added some pistachios to this milkshake & it tasted even more good..

Ingredients:
1 ripe avocado
2 -3 cups cold milk
3-4 tbsp sugar/as needed
1/2 cup pistachio blanched
1/2 tsp vanilla extract
Method:
Peel the avocado and cut into half discarding the pit.
Put all the ingredients in a blender & blend till creamy & smooth.
If you feel its too thick add about 1 cup milk & blend till combined.
Pour into glass & serve chilled.

Notes:
If you wish you could skip the sugar and add honey instead.
you could also use powdered pistachios.

By now, my regular readers would have been familiar with Gloria of Pepper Chilli and Vanilla. 
She had posted a beautiful Chicken Croquette recipe in my blog.   I was really happy when 
she wanted me to Guest post for her blog.
We became good friends after Gloria emailed me, after trying my Garlic Rolls and showered me 
with emails,comments and feedbacks almost everyday. 
Ours is a best example that friendship has no bounds, even if we have not seen each other in person.
I really feel privileged to do a guest post for my dear friend. 

Gloria is a great foodie who is really talented, which is well depicted in her blog. 
Each time I visit her blog, I leave back hungry and drooling over the variety that she presents in her blog. 
I am really happy and thankful to her to provide me this opportunity to publish in her blog.
Now over to today’s recipe is a simple yet elegant evening snack which is equally
 loved by kids and adults.



Apple-Cinnamon Pull-Apart Loaf (Serves 4-6)
Bread Dough:
Bread flour- 300 grams (2 ¼ cup)
Instant yeast- 1 tsp
Skimmed milk powder- 1 tbsp
Milk- 1 cup ( at room temperature or heat it until its slightly warm but not hot)
Sugar- 2 tbsp
Salt- ¾ tsp
Butter- 30 grams
Method:

Mix all the ingredients except butter and then add in the butter and
 knead until its soft and elastic for about 10- 15 minutes.
Add few more tablespoons of water if required to get a soft dough.

Cover with a damp cloth or a lid and let it rise until double in size for about an hour.
Knock down the air and pinch it into 16 – 18 portions.
Filling:
Granny Smith apples- 2 peeled and chopped
Brown sugar- 1/3 cup
Chopped pecans – ½ cup
Cinnamon powder- 1 tsp

Icing:
Powdered/ Icing sugar- ¾ cup
Water or milk- 2 tbsp
Vanilla- ½ tsp



 
Method:
Combine apples, sugar, nuts and cinnamon.
Flatten each roll and place 1 teaspoon of the apple mixture in the center of each dough.
Pinch edges together to seal, forming a ball.
Place filled balls in a greased aluminum foil or use greased Bundt or loaf pan.
Spoon remaining apple mixture evenly over the top.
Cover loosely with greased plastic wrap and let rise until double. It takes around 30 – 45 minutes.
Towards the last 10 minutes of proofing the dough, preheat the oven at 200 degreeC.
Remove the wrap,  place the foil on a baking sheet to catch any spill-over, 
 and bake at 200 degreeC for 25- 30 minutes.
Cover the bread with aluminum foil for the last 10 minutes of baking to prevent over-browning.
Cool for 10-20 minutes.
Combine icing ingredients, and drizzle over warm
loaf. Serve warm, if desired.


Tips:
Milk may be replaced with water when making the bread dough.
You may use walnuts instead of pecans.



 This dish is very simple yet very very  delicious  .The garlic , pepper and lime brings out the flavours really well.Its very easy to prepare this .You can serve this as a side dish or as appetizer.

Ingredients:
  • 15-20 medium sized Prawns/20-25 big sized 
  • 10 -15 garlic flakes finely chopped
  • juice of 1/2 lime/to taste
  • 1 tbsp freshly crushed pepper/to taste
  • 1.5-2 tbsp butter
  • 1.5 tbsp Olive oil
  • salt to taste

Method:

  • Clean the prawns and devein it ,remove the shell  ,wash and drain all the  water.
  • Marinate with everything except the butter.
  • Heat a pan add oil and butter  and shallow fry till the prawns are cooked well and garlic fried well.
  • Serve immediately as a side dish/Appetizer with fries /salad.
     
 
Everyone at my place love mangoes & we had plenty of them this summer .We relished  lots of mango made kulfis,milkshake  ,mango ice cream & now it was turn for some cheesecakes..I made this yesterday & we enjoyed it to the core..If you are a Mango fan you going to love this super awesome irresistible  Mango  Cheesecake .
Ingredients:
for the base
150 gms digestive biscuits
75 gms melted butter

For the cream filling
226 gms Philadelphia Cream cheese
250 ml fresh cream (i used amul)
1 1/2 cup alphonso mango pulp
1/2 cup sugar/ as needed depending on the sweetness of mango.
2 tbsp icing sugar
1 tbsp gelatin
1/2 cup hot water

for the mango glaze
1 cup mango pulp
1 cup hot water
1 tbsp gelatin

Method:
Place the digestive biscuits in a ziplock bag and crush them using rolling pin & mix them with melted butter .press it on the base of a springform pan/removable bottom cake tin ,refrigerate for 15-20 min.

Mix the icing sugar,sugar ,fresh cream ,cream cheese & mango pulp with a hand blender / whisk until smooth & combined .

Dissolve  the gelatin in hot water & once its warm mix in to the cream cheese- mango mixture.

Mix well till its well combined .I whisked it with electric blender so that it was combined well.

Pour this over the base & refrigerate for 2-3 hours or until set.

Dissolve  the gelatin in hot water, once its warm mix in the  remaining pulp .

Pour it over the set Cream layer & refrigerate for 4-5 hours.

Dip the knife into hot water & wipe  and then cut into slice & serve chilled.













Today's recipe is one of my most favourite Mutton dish ..Its Green Masala Mutton Curry ..The fresh green masala gives this mutton curry a special flavour & taste .This curry has no coconut  but still its very delicious.
It goes well with rice/rotis/pooris/ breads .We relished it with simple pulav & Crumb fried Mutton chops.
Ingredients:
1/2 kg Mutton
3 onions  sliced
1 tomato chopped
1/2 cup curds beaten
5-7 green chillies/ as needed
2green chillies finely chopped (optional)
2 cups fresh coriander leaves
1 cup mint leaves
1/4 tsp turmeric powder
1 tsp garam masala powder
1 tsp cumin powder
1 1/2 tsp coriander powder
1 1/2 tsp ginger garlic paste
salt to taste
Oil 3-4 tbsp


 Method:
  •  Wash the mutton well drain excess water & keep aside.
  •  Grind fresh coriander leaves ,mint leaves with  curds to a  fine paste.
  •  In a pan add 1 tsp oil & the sliced onions and fry till the onions turn  light brown.
  • Let the onions cool then grind together with green chillies to smooth paste.
  • In the pressure cooker vessel heat 2-3 tbsp oil once the oil is hot add curry leaves.
  • Then  add the ginger garlic paste ,fry well till raw smell goes off.
  • Now add chopped tomato & fry well till soft and mushy.
  • Then mix in the chilli-onion paste & saute for 3-4 min
  • Mix in the powdered masala ,salt , chopped green chillies ,turmeric powder & mix well 
  • Then add the  mutton & fry well till the masala coats the mutton.
  • Now add the curds- coriander mint paste.
  • Add about 1-1.5 cups water & cover with the lid & cook till the mutton is well cooked .
  • Serve hot with rice / breads/rotis.
